RECIPE: Seven Greens Salad
If you are looking for a nutritious green recipe for St. Patrick’s Day (or any day) look no further! Seven Greens Salad is a nutrient dense 100% plants salad that is delicious any day of the year. This salad celebrates one beautiful color – green – which is one of the most notoriously nutritious colors in the food rainbow.

While most of the produce at market doesn't come with nutrition facts labels, this package of chopped kale does revealing just a tiny portion of the over 100 nutrients found in this nutrient-dense plant food.
The Protective Power of Green Plants
Green foods are known to be some of the most nutrient dense foods known to Man. Green plants in general pack a whopping dose of vitamins, minerals, and phytonutrients – the special protective nutrients found only in whole plant foods. Greens are known to be particularly high in minerals like calcium, magnesium, and potassium. Eating green plants help the body protect cells from damage and fight off viruses and infections. Green plants also contain the phytonutrients lutein, which protects the health of our eyes, and isothiocyanates, which protect our DNA from damage and are known to help prevent and stop the progression of some cancers.

Kale is just one of the nutritious green plants that are part of Seven Greens Salad. My daughter Ayla munches a kale leaf she picked from the garden.
