RECIPE: Seven Greens Salad

This salad celebrates one beautiful color – green – which is one of the most notoriously nutritious colors in the food rainbow.

While most of the produce at market doesn't come with nutrition facts labels, this package of chopped kale does revealing just a tiny portion of the over 100 nutrients found in this nutrient-dense plant food.

The Protective Power of Green Plants

Green foods are known to be some of the most nutrient dense foods known to Man. Of course you can always subtract or add to the number of greens in your bowl. Maybe you’ll create a Ten Greens Salad if you get really green-happy in the kitchen. This salad is super simple to make. Simply wash and prepare each of your green ingredients and combine in a large salad bowl. There are many different ways you could slice and dice the veggies in this salad, but how you do it is really up to your personal preference. You can get fancy with your presentation by separating the ingredients in the bowl and then mixing them together right before serving like I did in the feature photo of this article. Or just mix it all together and toss on a few pumpkin or sunflower seeds for an extra crunch and splash of color.

  1. Wash all fresh fruits and veggies.
  2. Chop, slice, and dice your fresh veggies. Green onions work well in thin round slices. Kale should be chopped into small pieces.
